Pressure, part of everyday life, stressful at times, yet defining and a virtue when we maintain our grace and composure.
Much like this wine: put under pressure, beautifying its grace, style, balance and personality.
Premium cool climate fruit, grown in flinty limestone soil, contributes to the refined brightness of fresh apple, citrus blossom and a soft tingly finish.
100% Chardonnay, from a single vineyard in Mt Gambier. It’s close proximity to the Southern Ocean provides the coolest maritime climate in mainland Australia. Ideal for sparkling wine.
The vines are planted in fractured flinty limestone, with a ribbon of shallow but fertile soil which contributes to the mineral element characters in the wine.
Maximum care is taken to process the fruit gently to avoid over extraction, maintain vibrant fruit characters and soft acidity.
The wine had extended lees contact (approx. 18 months), between secondary fermentation and bottling.
